Dalia/broken wheat is very nutritious with low glycemic index and a super food for people with diabetes or who are on diet. It doesn’t mean only people with diabetes should have this, it is for everyone.
Broken wheat is nothing but cracked wheat which doesn’t undergo any refining, that means it has more fibre and it is more filling. In most of the northern India dalia kichidi or kheer is given to infants and toddlers as well.
Here is a quick recipe on Dalia kichidi with cheese, super nutritious whether it’s for baby or for adults as a meal or in between meal.
- Dalia/Broken wheat
- Moong dal
- Cheese slice/cube
- Vegetables – washed and diced vegetables(optional)
- Salt as per taste
- Take dalia and moong dal in 2:1 ratio, wash and soak them in double the quantity of water for 1 hour. If you are preparing this for infant/toddler add more water and cook for more time.
- In a pressure cooker pan, add soaked dalia and moong dal, vegetables, cheese and salt. Dalia kichidi in the photo is in cream colour since I did not add any vegetables to it.
- Place the pressure cooker on stove and let the water come to a boil. Close the lid and pressure cook for 10 min or 2 to 3 whistles or until dalia is cooked.
